The Art of the Elevated Tablescape with Sian Redgrave

With a deep interest in art and design, the Sydney-based cook, stylist and creative consultant aims to create genuine connections through heartfelt cooking and beautifully curated spaces.
We recently spoke to Sian on creating memorable dining experiences and building meaning through food.
Can you tell us a little bit about you and what you do?
I am a bit of a mixed bag. I think at heart I am an artist, but that has manifested into being a cook, stylist and creative consultant. I love to use food as a means of connection, storytelling and nourishment, intertwining design and styling to create beautiful scenes and experiences.
How would you describe your approach to styling?
I would say that my approach to styling is deeply entrenched in my work as a cook. The two disciplines co-exist and amalgamate to give me perspective, inspiration and discipline. There is a never-ending plethora of tradition, technique and knowledge in cooking, I don’t foresee ever running out of new things to learn. This eagerness to create and taste influences my aesthetic and approach when styling. I’m driven by food and the way it feels to eat a certain dish, its story, colour and flavour. Seasonality dictates this to an even finer degree. Film, fashion, music, architecture…these realms all fuel the fire. I’m a big believer in curiosity and seeking inspiration from the most unlikely of places. Creating a feeling that people are left with and remember is what I’m always trying to achieve.
Can you talk through some of the table elements you’ve styled?
I really wanted to play with shapes to curate a pared-back yet visually striking table. The Kari vases were my first choice, with their beautiful rounded edges and reflective surface. To add warmth to the silver of the vases and cutlery, I’ve incorporated rough linen napkins and tall waxy candles. Adding velvet bows to stemmed glasses gives a sweet festive touch.
How have you created a sense of luxury in this setting?
I wanted this setting to feel elegant and ethereal, without being immaculate or overstyled. Luxury is defined by restraint in my mind, the old ‘less is more’ trick. Alluding to a classic silver service setting, this tablescape pays homage to fine dining with silver, white and clear glassware. I then chose to layer neutral plates and napkins along with florals which were sculptural and textural, keeping the table tonal and soothing. Working within a neutral colour palette and not overcomplicating a table with an obvious theme is key to a classic, elevated feel.
What are some other elements to consider when creating a memorable dining experience?
Music is a fundamental component, setting the tone and giving energy and vibrance. I like to start with jazz house and a martini to welcome guests, moving into moody trip-hop and red wine. Lighting is also something subtle that makes a big impact—candles and dimmed lighting never go astray. Most importantly, cook food you are passionate about, comfortable to prepare and feel compelled to create. Intention always shines through.
Tell us about this time of year for you. Where are you celebrating and who with?
This time of year is shaping up to be quite the whirlwind. I have some really exciting projects coming up with work, my best friend is having a baby and I will be doing some travel. This year will be a celebration of hard work, new life, gratitude and togetherness. I am really looking forward to seeing my mum, relaxing with loved ones and spending some creative days in the kitchen cooking. Summer is spaghetti vongole and spritzes on high rotation along with a few competitive (but friendly) card games with friends.
